Delicious Italian Minestrone Soup - Full of nutrition and good flavors!
It's windy and cold outside. Then this Italian classic Minestrone Soup fits very well!
Ingredients
- 1 pack bacon
- 1 pcs onion
- 3 pcs carrot
- 4 pcs celery sticks
- 1 sstk shallots
- 1 pcs red chili
- 3 cloves garlic
- 1 pcs squash
- 500 gram pasta penne
- 1 liter chicken broth
- 1 can canned tomatoes
- 80 gram parmesan
- salt and pepper
- fresh basil
This soup is made in many different ways. What they all have in common is that it contains a lot of vegetables, broth, tomatoes and pasta. Some serve it as a vegetarian and others with meat. What is certain is that this soup is very good. My variety is with bacon, parmesan, lots of vegetables, pasta and good broth. Serve with some good bread.
Step 1
Start by finding a large pan and add a little olive oil. Start by frying bacon until it starts to get a nice color and becomes crispy.
Step 2
When the bacon is frying, you can start cutting up the vegetables. When the bacon is done, lift it out of the pan and place on a plate.
Step 3
Leave the fat from the bacon in the pan. Add the cutting vegetables to the bacon fat and stir well. Cook until the onion starts to become shiny and soft.
Step 4
Add 1 tablespoon sugar and the juice of 1/2 lemon (you can also use some white wine if you want). Add the chicken broth and the canned tomatoes. Let cook for about 30 minutes until the vegetables are completely tender.
Step 5
Find the parmesan cheese and grate with the fine side of the grater. Add the remaining crust to the soup. This gives a delicious taste to the broth.
Step 6
Find a pan and cook the pasta. Cook until the pasta is al dente (Al dente means that it is a bit chewy resistans), and strain off the water. Turn down the soup so that it does not boil. Pour in the cooked pasta and stir well. Put the soup on the lowest temperature. Season with salt and pepper. Finely chop the fried bacon and pour over just before serving. Finely chop some basil and grate lots of delicious parmesan. Sprinkle with a little basil and place a good "pile" of grated parmesan in the middle. Now just sit down and enjoy a wonderfully good Italian soup. Serve with a good slice of bread e.g focaccia.
