Authentic Cajun recipe from Louisiana - USA.
Ingredients
- 1 dl sunflower oil
- 4 tbsp wheat flour
- 2 dl dark beer
- 8 dl chicken broth
- 1 pcs onion
- 2 pcs peppers
- 2 pcs celery sticks
- 8 cloves garlic
- 8 pcs smoked sausages (of good quality)
- 1 000 gram chicken thighs
- 5 pcs bay leaf
- 4 tsp cayennepepper
- 1 tbsp smoked paprika spice
- 1 tsp ground black pepper
- 1 tsp salt
- 1 tsp sugar
- rice
- 1 pcs spring onion (as a fresh garnish)
Cajun recipes have their origins in Louisiana in the United States, but the flavors and spices have an influence from afar. This is the "national dish" in the area and there are countless versions of this dish. I have spent a lot of time getting the real and good taste a Gumbo should have. What is always in a gumbo are onions, celery sticks and peppers. It can be made with shellfish, sausages or chicken or a combination of these. This recipe is incredibly good and the smells of this pan spread throughout the house.
Step 1
Start by cutting the peppers, onions and celery sticks into cubes.
Step 2
Heat the oil until it smokes and add the flour. Stir well and do not leave the pan. You should now stir until the thickening gets a dark color. This is important to get the right taste of the dish.
Step 3
Add the vegetable mixture to the hot thickener and stir well. Cook until the onion has become shiny and soft. Now cut up the garlic and add. Stir for another 2 minutes before adding the beer and stirring until you get a smooth sauce.
Step 4
Add the chicken broth, bay leaf and spices to the pan. Stir well and lower the temperature until it just boils.
Step 5
Roughly cut the chicken, cook on high heat so it gets a little crust and add to the pan. Cut the sausages into suitable pieces and place in the pan. Put the lid on and simmer for 3 hours. Stir occasionally (about every 15 minutes). Fry the chicken on high heat so it gets a little crust before you put it in the pan.
Step 6
Finely chop the spring onion and boil the rice.
Step 7
Fill a plate with some rice and pour over plenty of Gumbo! Sprinkle over the spring onion and serve. Enjoy this delicious Cajun dish. Good luck.
