JAMBALAYA - a wonderful combination of spices and ingredients!

When someone shouts JAMBALAYA, just run to the dining table and look forward to a wonderful dinner!

  • 3 pcs chicken thighs
  • 3 pcs sausages of good quality
  • 1 pcs chorizo
  • 1 pcs green peppers
  • 2 pcs green chili
  • 1 pcs onion
  • 6 cloves garlic
  • 2 pcs celery sticks
  • 2 tbsp tomato puree
  • 1 can canned tomatoes
  • 1 tsp sugar
  • 1 tbsp smoked peppers
  • 2 tsp cummin
  • 1 liter chicken broth
  • 5 dl rice
  • neutral oil
  • salt and pepper

The dish originated in Louisiana. Here you will find an exciting food culture. It consists of a little American, a little French and a little Spanish. The culture is called Creole (French-African influence) or cajun (French-Spanish influence). And in such a mix of people with different backgrounds, exciting food arises. Jambalaya is easy to make and is popular with young and old alike. Here you get a super recipe with chicken and sausage, but it is also common to have shellfish.

Step 1

Start by finding a large pan and add a little neutral oil. Add the onion and the sausages and cook over medium heat until the onion has become soft and shiny. I use Chorizo which gives an incredibly beautiful color and good taste. When the onion has softened, I add the chili and garlic and fry for a few more minutes.

Step 2

Add tomato puree, spices and sugar and cook for a few minutes before adding the rest of the vegetables. Mix well.

When you have mixed everything well, I add canned tomatoes and the chicken broth.

Step 4

Bring to the boil before adding the chicken straight to the good broth. Remove the lid from the pan and set down to medium heat. Now let the chicken simmer in the broth for 30 minutes with the lid on.

Step 5

Pick out the chicken after 30 minutes and place on a baking tray. I add a little extra oil, salt and pepper and fry on the grill until the skin has a crispy and good surface.

Step 6

After you have taken out the chicken, I add the rice and stir well in the pan. Continue to cook over medium / low heat with a lid. Stir every 5 minutes so that the rice does not burn in the bottom of the pan.

Step 7

After 20 minutes, the dish is done! Season with salt.

Pour the pan over a large dish and place the chicken on top. Finish with some fresh herbs. Now you can enjoy a delicious JAMBALAYA! Good luck.
