Chili con Carne means translated to Norwegian chili with meat. The dish has its origins in Mexican cuisine, but is best known from Texas.
Ingredients
- 1,5 kg high ribs of beef
- 150 gram bacon
- 2 pcs onion
- 5 pcs red chili
- 2 pcs carrot
- 2 pcs red peppers
- 8 cloves garlic
- 1 can canned cherry tomatoes
- 1 can canned tomtatoes
- 1 can Heinz white beans
- 2,5 dl rødvin
- 3 tbsp tomato puree
- 2 tsp sukker
- 5 dl meat bouillon / broth
- 1 tbsp cummin spices
- salt, pepper and sugar
This is a cheap and very good dinner. I think the best result is when you use a high ribs of beef and let it cook tender. It is of course possible to make the same recipe with minced meat or beef mince. This is a dish that will cook for a while, so when I first make this I like to make 2-3 dinners at a time and freeze the rest. This is a classic dish with a lot of flavor.
Step 1
Start by cutting the high ribs into small cubes. Remove tendons and areas where there is only fat. Fry the meat on high heat in oil so it gets a nice roasting crust and add to the side. When you have finished frying the meat, add 2 tablespoons of tomato paste to the hot pan. Let this simmer a bit before boiling out the pan with 2 dl red wine. Sprinkle about 1 tablespoon of sugar together with the red wine and tomato paste and cook for 1 minute.
Step 2
Cut up all the vegetables and fry shiny in a large saucepan, about 5 -10 minutes on medium heat. Add the meat, tomato puree "batter", the canned tomatoes, the cherry tomatoes, the white beans, 2 tablespoons of cummin and the bull broth.
Step 3
Now let it simmer on low heat for about 3 hours. Stir gently occasionally with a spatula. During this time, the meat will become extremely tender and all the other flavors "melt together". Season with salt and possibly a little more chili if you want a stronger result. I like best to serve this with rice.
Step 4
Smak alltid til med litt ekstra salt og pepper hvis ønskelig. Hell over i en god skål og server enten med ris eller godt brød.
