Calzone - a baked turnover of pizza - Learn the tricks

Calzone is an Italian baked folded pizza. I am extremely fond of pizza and calzone is one of my favorites. I used to work as a pizza baker and have baked many thousands of pizzas. Here I will show you how to make a calzone at home.

A calzone gets a slightly different taste when the filling is cooked inside the pizza dough. But there is something special about this little "surprise" pizza. Everyone looks pretty similar on the outside, but it is when you split it up and the filling flows nicely outwards and the smells of delicious pizza spread in the room you understand why Calzone is so popular. You can vary the content according to what you like best yourself. I have a son of almost 13 years and Calzone with ham and cheese he is his favorite! I like to use a little spicy sausage or a little more flavors in mine, but the nice thing is that here you can make one for each.

Make a quick and good pizza sauce. When you make Calzone, it is an advantage that the sauce is a little thicker than usual. Here is the link to pizza sauce

When you choose the filling for the calzones, you can of course choose yourself, but here are some good tips. I like to mix different cheeses and today it was a mix between Jarlsberg, Norvegia and parmesan. Today I used chorizo and ham. Cut into small pieces and set aside. It does not go well with beef in calzone as this is cooked. If you love minced meat, this tastes very good, but then you have to fry the minced meat before you put it in the Calzone.

Now you'll put the pizza together. I've made a video on how to do that. It's fine and use a rolling pin too if you think it's easier. The most important thing is that you make the edge around a little thinner than the middle of the pizza. Place the pizza base on the kitchen workbench and fill in the middle with what you want. Add sauce and fold the pizza together. It is important that there is no pizza filling or sauce in the joint. Squeeze well as shown in the video.

Bake the pizzas at about 250 degrees until they start to turn golden brown. This takes about 7-8 minutes. Serve with a small sour salad. Good luck !
