A good sauce is so important when making pizza!
Ingredients
- 10 pcs good tomatoes
- 2 pcs shallots
- 1 tsp sugar
- 1 tsp salt
- 1 tbsp good olive oil
- 1 dl red wine
- 8 cloves garlic
- 1 can canned tomatoes
This sauce is my favorite and is easy to make. It gives a strong, yet fresh tomato flavor. Just right with acidity and sweetness. The trick is to bake the ingredients in the oven which gives a more concentrated taste. I like this recipe very much and use it for dishes other than pizza as well.
Step 1
Start by cutting the tomatoes in half and place in a fireproof pan. Sprinkle with sugar and a little olive oil. Place the garlic boats with peel in the same pan and put in the oven at 180 degrees for one hour.
Step 2
The result is sweet, baked tomatoes and garlic. Cut shallots and place in a saucepan with a little olive oil and cook over medium heat until shiny and soft.
Step 3
Add red wine and cook until the red wine is almost completely gone. Add the can of canned tomatoes and cook for a few minutes. When the tomatoes and garlic are done baking in the oven, pour them into the pan (remember to peel the garlic).
Step 4
Run completely smooth with a hand mixer. Season with salt and possibly sugar. Cool the pizza sauce. If you want a completely smooth sauce, you can strain it.
