Carrot and paprika soup - colorful, healthy and full of flavor and nutrition!
This is a very good soup made from carrot and grilled peppers. This combination is very good and the result is a great colorful soup.
Ingredients
- 2 glass grilled peppers
- 1 pcs red peppers
- 4 pcs carrots
- 3 pcs shallots
- 2 pcs red chili
- 4 cloves garlic
- 1 can creme fraiche
- 1 liter chicken broth / bouillon
- 0,5 pcs lemon
- 1 tbsp soy sauce
- salt and pepper
In this soup there is also a lot of garlic and chili so here there is a lot of flavor. Sour cream gives it a perfect acidity. If you want a little more food in the soup, it goes well with both chicken and scampi. I am very fond of making soups and at home we eat it often.
Step 1
Find a saucepan and add finely chopped shallots, garlic and chili. Fry in neutral oil for a few minutes until it starts to become soft and shiny. Add both glasses of grilled peppers.
Step 2
Peel and divide 3 of the carrots and add to the pan.
Step 3
Pour on the chicken broth and cook for 20 minutes.
Step 4
Run all the vegetables in the pan evenly with a hand mixer. Add sour cream and soy.
Step 5
Let cook for another 5 minutes and give the soup another round with the hand mixer. Season with lemon juice, salt and pepper.
Step 6
Make some nice strips of carrot and paprika and put on the table so everyone can choose how much they want in the soup. Serve piping hot and preferably with a good bread. Good luck.
