Celery root soup - Parsley root, ginger and celery root are a wonderful flavor combination
I had never tasted this combination before !! It will not be long until next time.
Ingredients
- 12 dl chicken broth
- 1 pcs celery root
- 1 pcs parsley root
- 1 klump ginger
- 3 tbsp creme fraiche
- 1 tbsp good olive oil
- a little cayenne pepper
- salt and pepper
- a little lemon juice
- roasted pine nuts
This was an incredibly good soup. A silky soft texture, quick to make and very good. Here you can make a healthy soup with a flavor combination you may not have tasted before. The soup is full of vitamins and low in calories.
Step 1
Start by peeling and slicing the celery root and parsley root into coarse pieces. I peel the ginger and finely chop it.
Step 2
Find a pan and pour in a good olive oil. Set on medium heat. Add all the vegetables. Pour over the chicken broth and turn up the heat. Add a little cayenne pepper to the pan. When it starts to boil, I turn down to medium heat. Let cook for 15 minutes.
Step 3
While the soup is boiling, I shake some pine nuts in a dry pan. Cook until the pine nuts have a slightly golden color and you can smell it.
Step 4
Using a blender or hand blender, whisk the batter into a smooth soup. Add sour cream and season with salt and pepper and a little lemon juice.
Step 5
Pour back into the pan and keep warm until serving.
Step 6
When I have to serve the soup, I pour it into a suitable bowl. Add a little toasted pine nuts, a little cayenne pepper, coarsely ground pepper and some fresh herbs if you have it available. Enjoy this delicious soup full of vitamins and dietary fiber. Good luck.
