Chicken fillet with sweet potato, sugar peas and paprika sauce - A healthy everyday dinner

  • 2 pcs sweet potato
  • 2 pcs carrot
  • 9 dl chicken broth
  • 1 pcs paprika
  • 1 tbsp tomato puree
  • 1 cloves garlic
  • 3 dl water
  • 2 tsp cumin
  • 1 tsp sugar
  • 1 bag sugar peas
  • salt and pepper
  • neutral oil for frying
  • a little lemon juice

This dish is very easy to make and the result is a colorful and healthy dinner. The dish is suitable for both young and old. Chicken is a popular dinner and it can be smart to be able to use the chicken in several dishes. This dish fills up with vitamins and good flavors.

Step 1

Start by turning your oven to 160 degrees hot air and find a frying pan, a small and a large pan. Pour some oil into the frying pan. Start by peeling the sweet potato and carrot and cut into coarse pieces. Place in the large saucepan and pour on the chicken broth. Turn on the heat and cook without a lid.

Step 2

Let the sweet potatoes simmer for about 20 minutes. Then a lot of the liquid is gone. Add the cumin and mash together with a hand mixer or suitable equipment. Season with salt, pepper and a little lemon juice.

Step 3

Grease the chicken fillets with a little oil and season well with salt and pepper. Bake with the skin side down until the skin has turned golden and fine. Turn the chicken with the skin up and place in the oven. Cook for +/- 10 minutes until the chicken has a core temperature of 61 degrees.

Now we're going to make the paprika sauce. It's very simple. Cut peppers into cubes and place in the small saucepan together with the garlic, a little oil and the sugar. Bake for a few minutes and pour on the water.

Let the paprika cook for a few minutes until it starts to soften. Run this mixture with a hand mixer and season with salt and pepper. It is also good with a little chili in this sauce if you like a little strong food.

Rinse the sugar peas in cold water and allow to drain. Cut into coarse pieces and place in a bowl until serving.

Step 7

Now all that remains is to put together the dish. Start with some delicious sweet potato puree, sprinkle with plenty of sugar peas and place the chicken on top. Finish with some of the good paprika sauce. This is a very healthy, simple and colorful dinner. Good luck.
