Chicken in coconut milk - A dinner in less than 15 minutes.
This is a simple and very good dinner that is perfect on days with little time.
Ingredients
- 4 pcs chicken breast
- 2 pcs carrot
- 1 pcs sweet peppers
- salt and pepper

Coconut milk sauce
- 4 dl coconut milk
- 6 dl chicken broth
- 3 tbsp cornstarch
- 2 tbsp soy sauce
- 1 tbsp chili puree
- 1 pcs lime (juice only)
- salt and pepper
Finishing mixing the sauce in a bowl is a smart trick for quick dinners. Cut the chicken and vegetables into thin strips so that it is fried and cooked faster. This is a dinner that takes a very short time to make. I think it is best with rice for this dish.
Step 1
Start by putting on the accessories. I usually serve rice for this dish, but it is also good with pasta or potatoes. Since the accessory takes the longest time, it is smart to start with this.
Step 2
Cut the chicken breasts into thin slices and set a saucepan on high heat. Put some oil in the pan. Season the chicken with salt and pepper and place in the pan. Bake for a few minutes, stirring occasionally.

Mix together the ingredients for the sauce in a bowl or liter measure. Stir well and pour directly over the chicken.
