Chicken nuggets with vegetables and dip - Good for young and old
Chicken nuggets are very good when you make them yourself. I use chicken breasts and roll them in Cornflakes before frying them.
Ingredients
Chicken nuggets
- 3 pcs chicken breast
- 1 pcs egg
- 2 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 1 dl breading flour
- 1 tsp oregano
For breading
- 2 pcs egg
- 2 tbsp milk
- salt and pepper
- cornstarch flour
- cornflakes
Baked vegetables
- 1 pack small potatoes
- 1 pcs small cauliflower
- 4 pcs carrot
- 1 tbsp olive oil
- salt and pepper
Spicy tomato dip
- 3 dl ketchup
- 1 tbsp honey
- 1 tsp worchester sauce
- 1 tsp strong chili sauce
- salt and pepper
This is a popular dinner for both young and old. Chicken nuggets are a widely sold dish, but unfortunately most are from fast food chains. I do not know how much chicken they actually have in their nuggets, but I only use chicken breast that is seasoned to get the best taste. The dinner is easy to make and it is a super dish to let the children help make. A slightly spicy ketchup dip is perfect for both chicken and vegetables.
Step 1
I start with the vegetables since they take the longest time. Put small potatoes, carrot in pieces and cauliflower in pieces in a fireproof pan. Pour over a little olive oil, salt and pepper and mix well. Bake on hot air 180 degrees until tender and good.
Step 2
Cut the chicken breasts into coarse pieces and place in a food processor. Pour on the salt and run until it becomes a sticky mass.
Step 3
Add eggs, breading flour and spices, and mix again. This becomes a firm forcemeat that is easy to shape.
Step 4
Using a wet spoon, shape the nuggets by hand and spoon. It's okay that it has a fairly similar size. This means that they fry evenly. Place the finished buns on a plate.
Step 5
Find a bowl with cornstarch, a bowl with the egg mix and one with crushed cornflakes.
Step 6
Roll the buns first in the cornstarch and shake off. Dip them into the egg mixture and make sure the whole thing is covered with eggs. Let the egg mixture drain a little before you put them in the crushed cornflakes. Place the finished chicken nuggets on a platter / plate.
Step 7
Find a frying pan and add a little neutral oil and 1 tablespoon butter. Fry the chicken on medium heat until they have a golden and nice color on both sides. If you want to prepare for tomorrow's dinner, this can be done the day before and you only need to heat them up in the oven the next day. Place the finished nuggets on a fireproof pan or serve immediately. I let them fry together with the potatoes for the last 5-6 minutes so they are steaming hot when served.
Step 8
Mix the ingredients in the spicy tomato dip and mix well. Feel free to pour into a small bowl for each. Then it is allowed to double dip and you release "pig" in the dip.
Step 9
Serve steaming hot nuggets with the fried vegetables and dip! Enjoy yourself and enjoy a delicious dinner. Good luck.
