Juicy and spicy taco chicken - Try this instead of minced meat.
Friday is the big taco day in Norway. Tacos can vary from the traditional slightly sad Norwegian variety with "old el paso" spices, Norvegia cheese, ready-made sauces and shells to a more tasty and more authentic Mexican taco. I always prefer the last of these. More taste, healthier and much better. Here is a recipe for a very delicious chicken mixture that is quick to make. Try replacing the regular taco minced meat with this one!
Ingredients
- 4 pcs chicken breast
- 2 pcs shallots
- 3 cloves garlic
- 1 klump ginger
- 1 tbsp oregano
- 1 tbsp cummin spice
- 3 tsp chili powder
- 2 dl water
- 0,4 dl apple cider vinegar
- 1 tsp sugar
- 1 tsp salt
- neutral oil for frying

Pickled red onion: Everything can be pickled
Start by seasoning the chicken fillets with salt and pepper. Pour a little neutral oil into the frying pan and heat up.
Step 2
Fry the chicken on high heat for a few minutes until it gets a nice crust. When you have fried the chicken on both sides, transfer it to a baking tray and place in a preheated oven at 160 degrees. Cook for +/- 10 minutes or the chicken has a core temperature of about 61 degrees.
Step 3
In the frying pan you fried the chicken, add the finely chopped shallots, garlic and spices.
Step 4
Add a little more neutral oil and cook for a few minutes until the onion is soft and golden. Now add water and apple cider vinegar.
Step 5
Mix well. Grate the ginger and simmer this mixture for a few minutes.
Step 6
Take out the chicken when it is ready and let it rest for a few minutes. Cut into smaller pieces.
Step 7
Mix the divided chicken back in the frying pan and turn down the heat.
Now the chicken is ready! It is very good with some fresh coriander on top, but you can choose for yourself. This is very good and a great alternative to the more common taco minced meat. Good luck.
