Couscous with cheese and vegetables - A quick and delicious dinner!
A good dish with vegetables and cheese.
Ingredients
- 1 pack Apetina Pesto
- 2,5 dl couscous
- 2,5 dl water
- 1 pcs vegetable broth cube
- 1 pcs red onion
- 2 pcs tomatoes
- 1 pcs cucumber
- 2 dl pomegranate seeds
- 1 pcs sweet peppers
- a little fresh basil
Couscous is beautiful and attracts all the delicious flavors you add. This is a dish you can make with minimal kitchen utensils. I often make couscous in the summer and it is delicious as a separate dish or as an accompaniment. That this is both simple and takes a short time is a bonus.
Step 1
Measure out the right amount of couscous and place in a bowl. Bring the water to a boil and feel free to add a little vegetable broth to the water. When the water boils, pour the water over the couscous and stir quickly. Cover with plastic and leave to stand.
Step 2
In this dish you can use many different vegetables. In this dish, it is best with vegetables that you do not need to cook because they are to be added raw in the dish. Finely chop all the vegetables and place in a bowl.
Step 3
Take the plastic off the couscous, stir and pour into the bowl with the vegetables.
Step 4
Take the Apetina cheese with oil in the bowl and mix together. Season with salt and pepper. Finish with some fresh herbs and pomegranate seeds. Now your couscous salad with vegetables and cheese is ready to serve. Good luck.
