Fried vegetables with Apetina dressing - Sour, fresh and tempting

Easy method that is perfect for cleaning up the vegetable drawer!

Apetina dressing

  • 1 can Apetina Herbs & spices
  • 2,5 dl natural yogurt
  • 1 tsp lemon juice
  • 2 tsp honey
  • salt and pepper

Vegetables

Here you can use the ones you have in the fridge

  • 4 pcs carrot
  • 1 pcs parsley root
  • 1 pcs squash
  • 1 pcs sweet pepper
  • 2 pcs onion
  • 1 tbsp olive oil
  • salt and pepper
  • fresh herbs
Ingredients

This is a delicious dish that can be used as an accompaniment or as a separate dish. You can combine several types of vegetables and a super dish to use up the leftovers of vegetables in the fridge. A delicious cheese sauce with Apetina is poured over just before serving and binds the whole dish together. Also check out the video where I show how to make this dish.

Step 1

Find a fireproof pot and set the oven to 250 degrees hot air. Find different vegetables you have in the fridge. Peel the vegetables and cut into coarse pieces.

Step 2

Put all the pieces of vegetables in the refractory dish and pour over a little olive oil. Sprinkle with a little salt and pepper and mix well with your hands. Put the pot in the oven.

Step 3

Now we are going to make this delicious and simple cheese sauce. Pour Apetina feta cheese into a bowl and bring the oil. Pour in natural yoghurt and use a hand mixer or blender and run to a smooth dressing.

Step 4

The cooking time can vary slightly depending on how large pieces you have cut up the vegetables. Somewhere between 15-20 minutes is perfect and I like that there is some chewing resistance in the vegetables and they have got a golden color. Take the pot out of the oven and pour onto a dish.

Step 5

Pour over well with the good cheese dressing and the dish is ready to be enjoyed. Top with some fresh herbs just before serving. Good luck. Here you can see a video of the whole process.
