Ingredients
- 300 gram Frøya midloin
- 500 gram pasta tubes
- 10 pcs cherry tomatoes
- 1 handful leaf parsley
- 1 pcs lemon (juice only)
The sauce
- 1 cloves garlic
- 1 pcs shallots
- 2 tsp siracha chili sauce
- 1 tbsp cornstarch flour
- 4 biter sundried tomatoes
- 3 dl chicken broth
- 1,5 dl whipped cream
- 40 gram parmesan
This is a very good everyday dinner and the clever method of making the sauce makes this a quick dinner to make. Using good salmon in pasta dishes is very smart! Here, 300 grams of Frøya midloin is enough for 4 people, which makes the dish quite affordable. This recipe also has a video explanation that you can see further down in the recipe.
Step 1
Start by cutting the salmon into cubes and place in a bowl.
Step 2
I make the whole sauce in a blender. Add all the ingredients for the sauce to a blender and blend until smooth. The cornstarch thickens the sauce when it boils.
Step 3
Find a frying pan or pot to make the sauce, and a pot to cook the pasta. Pour the sauce into the pan/pot and let the sauce boil for a few minutes. I cut up tomatoes, chop parsley and cut a lemon in half.
Step 4
When the sauce has boiled for a couple of minutes, I add the tomatoes, parsley and the juice of the lemon. Adjust the thickness of the sauce with a little of the cooking water from the pasta. Season with salt and pepper. When there are 5 minutes until the pasta is ready, I add the pieces of salmon and turn the heat down to low.
Step 5
Finish by draining the water from the pasta and mixing the sauce with the pasta. Now the dish is ready to enjoy!
Here you can see a video of how I make this dish.
