Minestrone soup - Italian traditional food that warms in the cold.

Minestrone soup

  • 250 gram diced bacon
  • 250 gram chorizo
  • 2 pcs onion
  • 4 pcs carrot
  • 2 tbsp tomato puree
  • 4 pcs celery sticks
  • 2 pcs red chili
  • 6 cloves garlic
  • 2 liter chicken broth
  • 2 bokser canned tomatoes
  • 80 gram parmesan
  • 3 tsp sugar
  • salt and pepper
  • finely chopped basil
  • finely chopped parsley

  • Pasta if desired

This soup is made in many different ways. What they all have in common is that it contains a lot of vegetables, broth, tomatoes and pasta. Some serve it as a vegetarian and others with meat. What is certain is that this soup is very good. My variation is with bacon, chorizo parmesan, lots of vegetables, pasta and good broth. Serve with some good bread.

Step 1

Start by finding a large pan and add a little olive oil. Start by frying bacon and chorizo until it starts to get a nice color and becomes crispy.

Step 2

When the meat is frying, you can start cutting up the vegetables. When the mixture has become crispy and good, lift this out of the pan and place in a bowl.

Step 3

Leave the fat in the pan. Add the cutting vegetables to the bacon and chorizo fat and stir well. Cook until the onion starts to become shiny and soft.

Step 4

Add sugar, tomato paste, garlic and chili and cook for a few more minutes. Let this simmer for 5 minutes. This means that the garlic is properly fried and the tomato puree loses its slightly sharp taste.

Step 5

Pour in the chicken broth, the canned tomatoes and the meat you fried. Find the parmesan cheese and grate with the fine side of the grater. Add the remaining crust to the soup. This gives a delicious taste to the broth.

Step 6

Let the minestrone soup simmer for 1 hour. I cook the pasta next to it and add to the plate. Then I pour over the hot soup and sprinkle over some finely grated parmesan. Feel free to take a few drops of olive oil over the soup and some fresh herbs. I freeze the rest of the soup and have a quick good dinner another day as well. Good luck.
