Fidel Castro with lime foam - One of the favorite summer drinks!
Rum + ginger ale = true
Ingredients

- 4 cl Havana Club 7
- 14 cl ginger ale
- 1 tbsp lime foam
- finely grated lime peel
Lime foam (enough for many drinks)
- 4 pcs the juice of lime
- 2 tbsp sugar
- 1 pcs the white of an egg
This is one of my big summer favorites when it comes to drinks. It is fresh, sour and perfect on a sunny day. Dark well-stored rum, ginger ale and lime are a combination that fits very well together. With drinks as with food, it is important that the raw materials are of good quality. In this drink I prefer to use dark well-seasoned rum.
Step 1
Start by making lime foam. This is most easily done with a spuma bottle, but you can also whip egg whites and sugar to foam and add lime juice. Fill a drinking glass with ice cubes almost to the top. Pour into dark rum and fill with ginger ale. Put some finely grated lime peel in the glass and stir. Finish by topping the drink with lime foam and a little more finely grated lime peel.
