Fried Ravioli - Street food version with crispy stuffed pasta!

A Streetfood version from the USA of a classic Italian pasta dish.

Meat filling

  • 400 gram beef mince
  • 2 cloves garlic
  • 1 tsp chili powder
  • 50 gram parmesan
  • 2 dl ricotta cheese
  • 1 handful fresh basil
  • 0,5 pcs lemon (juice only)
  • salt and pepper

Spicy tomato sauce

  • 1 tsp chili powder
  • 2 cloves garlic
  • 1 pcs shallots
  • 2 tbsp tomato purée
  • 1 tbsp red wine vinegar
  • 1 can good canned tomatoes
  • 3 tsp sugar
  • 1 tbsp good olive oil
  • salt and pepper
  • some of the boiling water from the pasta

Basic pasta recipe

  • 300 gram Pasta flour (tipo 00)
  • 195 gram eggs (mostly egg yolks)
  • 2 tsp salt
  • 1 tsp olive oil
  • 2 pcs egg
  • frying oil
  • panko / bread crumbs
  • grated parmesan

Ravioli are thin pasta plates that are filled with delicious content between the plates and the plates are sealed so you get a fantastic pasta filled with what you like best. Ravioli is one of my favorites and in Italy this is made in many different forms and filled with many different flavors.

Step 1

Start by frying the beef mince together with the chili and garlic. Season with salt and pepper.

Mix the fried meat together with the other ingredients for the filling and mix well. Put in the fridge. It is much easier to shape small balls when it gets cold. This makes the job much easier when you have to fill up the ravioli.

Start by finding a large frying pan and pour in well with good olive oil. Add chili, garlic and shallots. Cook until the onion is soft and shiny. Take in tomato paste and sugar and cook for a few minutes. This means that the slightly bitter taste of the tomato puree disappears. Add a splash of red wine vinegar and let it boil away. Pour in the canned tomatoes and stir well. Dilute with the boiling water from the pasta to get the desired consistency. Season with salt and pepper and simmer in a pan until you are ready to serve the food.

How to make Ravioli: Start by rolling out thin sheets of pasta dough. I use a small pasta machine, but you can also do this with a rolling pin. Make sure there is some flour on the whole kitchen bench so that the dough does not stick. Place one of the plates on the bench and fill with small balls of the meat mixture. Place the meat on one side of the pasta plate so you can fold it over and cover the entire filling. Squeeze out the air between and paste the dough together. I have a few different ravioli presses, but it's fine to use a mold, glass or something similar to squeeze out the mold. A ravioli press gives you a very nice look, but the taste is just as good if you use something else. Press the edge with a fork if you do not have a ravioli press. The most important thing is that the edge is completely tight.

When preparing the dish: Find a large pot and fill with water. Bring the water to a boil and add plenty of salt. Add the pasta and cook for 4 minutes.

Mix the eggs in a bowl and add the panko in another bowl / dish. Start by rolling cooled ravioli in the egg mixture before placing them in the panko / bread crumbs. Make sure they are covered with panko and place in a heated fryer at 180 degrees. Fry for about 3 minutes until golden.

Step 7

Finish by sprinkling a little finely grated parmesan and salt. Feel free to garnish with some fresh herbs and serve the tomato sauce in a separate bowl as a dip. Good luck.
