Gladkokken's medister cakes - a little coarser, a little more flavor and so much better!

I love Christmas food and Medister cakes are something I always have to have on Christmas Eve. There will usually be a dinner or two with medister cakes before Christmas as well. That's so good!

  • 2 kg medister forcemeat
  • 1 kg minced meat
  • 2 tsp salt
  • 3 tsp ginger
  • 3 tsp cinnamon
  • 3 tsp white pepper
  • 2 tsp ground cardamom
  • 1 tsp ground cloves
  • Butter for frying

I like to make a little coarser medister cakes so I mix medister forcemeat and minced meat. I add well with spices that belong to Christmas. I have served these at Christmas for several years and they are loved by both young and old. Try this recipe and I can guarantee that you will never buy "store-ready" medister cakes again. It's hard not to get a little Christmas mood when you start frying these. The delicious smell spreads throughout the room.

Start by running the minced meat in a food processor and add the salt first. This makes the dough more sticky and the result even better.

Pour in the rest of the spices and whisk until smooth. It is important that the spices mix well around the mince. Now add the medister forcemeat and run in a food processor until everything is very well mixed.

The reason I like best to mix medister forcemeat with minced meat is that it has a slightly coarser consistency and I think the taste is even better!

Once you have mixed everything well, it's time to start baking the medister cakes. Find a glass and fill with water. Use a wet spoon and your hand to shape the cakes. It's always smart to make a sample cake first. Then you can adjust with salt, pepper and spices to your liking before frying them all.

The easiest method is to have damp hands and use a spoon to pick up the mince and shape the cakes. It does not matter if everyone is exactly the same. I think the bit of the charm of the homemade ones is that they also look homemade. Heat a good frying pan to a little over medium high. On a scale of 1-9, I used 6 on the heat. Put some medister cakes in the pan and bake until it gets a golden and nice crust on one side and then turn and do the same on the other side. It is not so careful if they are cooked through because they should be in the oven before serving.

These can be made well before Christmas and frozen. Let the medister cakes bake in the oven at 180 degrees for 20 minutes. Good luck.
