Grandma's ham and cauliflower gratin - nostalgia and joy!
This delicious gratin was made by my Grandma and I remember it very well from when I was little. Delicious pieces of ham, lots of cauliflower and macaroni. All united in a delicious rich sauce and topped with au gratin cheese. I have made some small changes to the original recipe, but I think Grandma had clearly approved this.
Ingredients
- 2 bokser picnic ham
- 2 pcs small cauliflower
- 3 dl macaroni
- 2 tbsp butter
- 2 tbsp wheat flour
- 5 dl milk
- 3 pcs egg
- 2 tsp dijon mustard
- 1 tsp ground nutmeg
- 1 knivsodd cayenne pepper
- 150 gram cheese
- breading flour for topping
- salt and pepper
Step 1
Start by finding 3 pots and a frying pan. Boil water add macaroni. Cook until done, but still have some chewing resistance.
Step 2
Cut the ham into cubes and fry in neutral oil so they get a little crust.
Step 3
Clean the cauliflower and cook for 3 minutes. Pour off the water. As everything is done, you just pour it into the pan you are going to fry the gratin in.
Step 4
Now it's time to make white sauce. I have made an instructional video about this so if you need help click on the link here White sauce - a starting point for many good sauces When the sauce has boiled for a few minutes, add the spices and taste. Turn off the heat and pour in the cheese. Stir until the cheese has melted. Add the egg yolks and stir in the Dijon mustard well. I whip the egg whites completely stiff and turn into the sauce at the end. Then you get an airy and very good gratin sauce.
Step 5
Put cauliflower, macaroni and ham in the pan and mix well. Pour over the sauce and mix so that it is evenly distributed throughout the pan.
Step 6
Finish by sprinkling the rest of the grated cheese and sprinkle with breading flour and a little salt.
Step 7
Put the pan in a preheated oven at 220 degrees hot air and bake for 20 minutes. Let cool for a few minutes before enjoying. This is a childhood dish for me and I guarantee this is very good! Good luck.
