Homemade Potato Chips with "Holiday" dip - Dangerously good!

One of my guilty pleasures is Potato Chips and Dip!

Ingredients

Potato chips

  • 4 pcs large potatoes
  • 1 liter sunflower oil

Spice mix

  • 2 tsp salt
  • 1 tsp paprika powder
  • 1 tsp onion powder
  • 1 tsp aromatic spices
  • 0,5 tsp cayenne powder

"Holiday" Dip

  • 1 can sour cream
  • 1 tsp red wine vinegar
  • 1 tsp salt
  • 1 tsp aromat seasoning
  • 2 tsp paprika powder
  • 1 tsp onion powder

Making potato chips yourself seems to many a little unnecessary when you can buy good alternatives in the store. It may be a little unnecessary, but I think it's fun, the result is very good and it's a bit fancy to serve homemade snacks. The spice mixture for these chips is magical and the dip is dangerously good. If you want to try something new and serve homemade snacks, I will share my best dipping recipe and the method for making potato chips. The method also works on other root vegetables and sweet potatoes.

Step 1

It is important to get thin slices of potato. I use a mandolin, but you can also use a cheese grater. It is important that everyone is equally fat as this makes the job even easier. Cut the potatoes into slices and place in a bowl with ice cold water. Change the water a few times and leave for a minimum of 30 minutes. In this way, the potatoes lose a lot of the starch.

Step 2

Dry the potatoes well between two kitchen towels.

Step 3

Pour sunflower oil into a large saucepan and heat up to about 170 degrees. The potato chips must be fried in 2 rounds. Fry first for a few minutes until they begin to color. Take them out and put on some drying roll. Fry only a little and a little.

Step 4

Once everyone has been fried once, round number two comes into the fryer. This round is when the magic happens. Watch and fry until golden and crispy. Transfer to a drying roll again and sprinkle over some of the spice mixture. I also think it's good with a little finely chopped parsley on the potato chips.

Step 5

Mix the ingredients for the dip and leave in the fridge until serving.

Step 6

Place on a large platter and serve homemade potato chips with dip. It does not get better than this. Good luck.
