Homemade Spicy Ketchup - Perfect recipe for using up tomatoes!

- 2 kg fresh tomatoes
- 1 pcs onion
- 2 pcs red chili
- 1 tbsp olive oil
- 3 cloves garlic
- 2 dl sugar
- 1 dl white wine vinegar
- 1 tsp salt
- 1 tsp white pepper
- 2 tsp brown sugar

If you choose to make this I think you will be very happy with the result. I am very fond of tomatoes and when I cleaned the fridge I found that I had an incredible number of tomatoes. Then I started looking for how to make a perfect homemade ketchup. The result was a fresh, tasty and slightly spicy ketchup perfect for fries, burgers and sausages.
Step 1
Find all the tomatoes you have. I used a variety of several types of tomatoes before I had cleared the fridge. It does not matter if they are a little mature. Wash them well and coarsely chop the tomatoes. Put all the tomatoes in a blender and whisk until smooth.
Step 2
Find a large saucepan and add olive oil. Finely chopped onion, garlic and chili and add to the pan. Cook until the onion has become shiny and soft.
Step 3
Pour over all the tomatoes from the blender and stir well. Add vinegar, sugar, salt and pepper and bring to the boil.
Step 4
To make this without e-substances or other starches, you should now boil the ketchup to the right consistency. This takes some time. I stir occasionally so there is nothing burning to the pan. In the beginning, this mass is very thin, then it becomes more like a soup and when it is cooked even more, it becomes the consistency of a ketchup. Remember that it thickens even more when it gets cold.
Step 5
Use a fine strainer and strain through the ketchup to remove seeds, onion residues +++ Now you have a completely even mass. Now let the ketchup cool down completely. Taste if you need to adjust a little on the amount of spices for a perfect ketchup for you.
Step 6
