I almost always have pickled red onions in the fridge!
Ingredients
- 6 pcs red onion
- 2 dl 7% vinegar
- 4 dl sugar
- 6 dl water
- 1 klump fresh ginger
A couple of years ago was the first time I made pickled red onions myself and since then it has become a favorite. It is easy to make and goes with an incredible number of dishes. For Taco it is a must, but fits in salads, on the slice of bread, for barbecue etc.
Adding fresh ginger to the pickled onion makes this magically good! Here is my recipe.
Step 1
I start by cutting up the red onion. Remove the ends of the onion and divide in the middle. Now it is easy to remove the shell and you can cut pretty "crescents". Be sure to cut the onion into equal and thin strips.
Step 2
Add vinegar, sugar and water to a saucepan and set on medium heat. Stir occasionally and heat to boiling point or the sugar is completely dissolved and the liquid becomes shiny. Peel a ginger and cut it into slices. Put this in the jam pickle.
Step 3
Place the slices of red onion in the jam jar and pour over the boiling jam pickle. Leave without the lid until it has cooled down a bit. Put on the lid and put in the fridge.
Step 4
The next day already, the pickled red onion is ready to be enjoyed. Now it has changed color to a great pink color and they have become crispy, sour and sweet. Pickled red onions have a long keeping quality in the refrigerator, but be sure to use clean kitchen utensils when removing red onions. A simple and very good accessories. Good luck.
