I got a challenge from my friend Magnus who has lived in Spain for a few years: Can you recreate one of my favorite dishes. I love a good challenge and after studying the dish from several Spanish chefs comes my version. Below you will find a thorough step by step explanation and an instructional video.

Step 1

I make homemade fried potatoes, but it is of course possible to replace with ready-made french fries from the store. If you take the time to make this yourself, it will be far better. Start by rinsing the potatoes well and cut into slices. I use a mandolin because it goes a little faster and all the slices are the same thickness, but you can also cut them up with a knife. Put the potato slices in cold water and rinse a few times so the water becomes clear and they lose the starch. Boil water in a saucepan and let the potatoes simmer for 5-10 minutes until they start to get a little tender. This is the same process I use if I am going to make perfect french fries. Pour off the water and place the potato slices on a rack so they dry a bit. You can put them in the fridge as well. Now the potatoes must be fried in two rounds. First once at about 150 degrees (about 5 minutes) and then one last time at 185 degrees (2-3 minutes) for extra crisp, color and crispiness. Season the potatoes with a little salt when they are done frying.

Step 2

The eggs should be fried in plenty of olive oil. It is extremely important that you have running egg yolks so they do not fry for long. When you "tear" the eggs apart when serving, it is the liquid egg yolk that becomes the "sauce" and binds this dish together. Heat to high heat and add the eggs. Pour a little of the hot oil on the egg white so it finishes faster. Place the finished eggs on a plate until you are ready to assemble the dish.

Now all that remains is to put together the dish. Find a plate, place on the fried potato slices and carefully place the eggs on top. Tear up some Iberico ham and place over. Finish with a little finely chopped parsley and chili flakes. Now your Huevos Rotos are ready to be enjoyed. Grate the eggs so that the plum flows down on the potato and enjoy. Good luck.
