Jamaican Jerk Chicken - Perfect juicy pieces of chicken on the grill

Jamaican Jerk Chicken

  • 6 pcs chicken thighs
  • Marinade (see recipe below)

Marinade

  • 6 pcs spring onions
  • 1 pcs onion
  • 6 cloves garlic
  • 2 pcs habanero chili
  • 1 klump ginger
  • 2 dl brown sugar
  • 2 dl soy sauce
  • 1 dl worcester sauce
  • 1 dl neutral oil
  • 2 pcs lime (juice only)
  • 1 tbsp black pepper
  • 2 tsp spice
  • 2 tsp salt

I am very fond of food from different cultures. I have wanted to try Jamaican Iron Chicken for a while. Today's opportunities to follow and see local chefs from around the world are quite unique and exciting. After a few hours of "studying" to find the perfect recipe, I went to try. This is perhaps the best chicken I have ever tasted! Extremely juicy, spicy and a lovely taste! This is perfect on the grill this summer.

All the ingredients in the marinade are roughly cut and put in a food processor or blender. This should be used both as a marinade and you should brush the chicken with this several times during grilling. This dish should be quite strong, but if you are a little wary of chili then reduce to 1 habanerochili as these are a little angry.

Step 2

Cut the legs in half at the joint so you get big pieces and thigh steaks. I use a sharp knife to cut a little into the chicken before marinating. This makes it grilled a little smoother, the marinade gets better into the meat and you get more crust when the chicken is to be grilled.

Step 3

Now put the chicken in a bag and pour in half of the marinade. Make the bag as airtight as possible to give the chicken a little massage so the marinade covers all parts of the meat. Put the chicken with marinade in the fridge. Here it will enjoy itself for 24-48 hours.

When grilling Jamaican Jerk Chicken, use direct heat first and then on indirect heat until the meat is thoroughly grilled. It is also important for the taste to add smoke. I recommend using a charcoal grill on this recipe, but you also get the same good smoke if you use a gas grill and smoke box. Turn the meat often and butter with more marinade. Marianden contains sugar which gives a wonderful caramelized surface.

When the chicken has got a nice golden color and reached the desired temperature (which is about 71 degrees) then take it off and let it rest for 10 minutes without covering it. (If you cover it, the skin will be soft). Now you can enjoy a delicious chicken recipe from Jamaica.
