KFC - Korean Fried Chicken - Magically good chicken wings!

So good that it's hard to stop eating!

Korean Fried Chicken - KFC

  • 1,2 kg chicken wings raw
  • 5 dl cultured milk / buttermilk
  • 200 gram potato flour
  • 1 tbsp salt
  • 1 tbsp pepper
  • 2 pcs spring onion
  • 1 tbsp white sesame seeds
  • frying oil
  • KFC sauce (see recipe below)

KFC sauce

  • 1 tbsp neutral oil
  • 1 tbsp finely chopped garlic
  • 1 tbsp grated ginger
  • 2 dl ketchup
  • 3 tbsp Gochujang chili purée / Chilisauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 dl brown sugar
  • 1 dl honey
  • 1 tbsp rice vinegar
  • 1 tbsp dijon mustard

There are many different versions of Korean Fried Chicken. I have tested a bit and I think this recipe is completely magical. The sauce is sweet, strong and sour and gives the crispy chicken pieces the perfect glaze! The chicken pieces have been soaked in cultured milk as a marinade and fried twice for an extremely cripsy surface. Here I will show you my version of this classic dish KFC and I guarantee that when you put these on the table they will be very popular.

Step 1

Start by rinsing the chicken wings in cold water and wiping them.

Put the chicken wings in a bowl and pour over cultured milk. In several recipes they use "buttermilk", but it is not a common product in Norway. I think the culture milk gives the same effect. It tenderizes the meat and gives an acidity to the end result. Mix well and cover the bowl with plastic. Leave the chicken in cultured milk overnight in the refrigerator or at least 2 hours at room temperature.

Step 3

Mix together the potato flour and the spices. This should be used to bread the chicken. Cover the chicken wings well with this mixture and place on a rack ready for frying.

Step 4

When the chicken is waiting to be bathed in hot oil, we will make the sauce. Start with a little neutral oil and fry the garlic and ginger on medium heat until the garlic has become shiny and soft. Pour in the other ingredient of the sauce and bring to the boil. Let the sauce cook for 10 minutes on medium heat.

Step 5

Heat suitable oil to 170 degrees in a saucepan. First fry the chicken wings for 3 minutes and place back on the rack. Do not put too many chicken pieces in the oil at the same time because then the oil will be a little cold. We have to fry the chicken for 2 rounds. Next round they should be fried for about 2 minutes. Put back on the rack so the fat has time to drain a little.

Step 6

Just before serving, I mix the fried chicken pieces with the sauce. Mix well so that all parts of the chicken wings are covered with sauce. Pour the chicken onto the dish you want to serve them on.

Step 7

Finish by sprinkling over white sesame seeds and a little finely chopped spring onion. Serve steaming hot and enjoy !! Good luck.
