Singapore peppercrab - King crab in fantastic flavors!
If I were to choose my last meal, the Singapore peppercrab would definitely be included in the review.
Ingredients
- 4 bein raw king crab
- 1 stk urte coriander
- 2 pcs red chili
- 4 cloves garlic
- 50 gram fresh ginger
- 1 dl rice vinegar
- 2 tbsp butter
- 2 tbsp whole black pepper
- 1 pcs lime (juice only)
- 2 dl Ketjap manis (sweet soy)
- 1 dl sugar
- fresh spring onion
- Good bread (to get all the sauce)
When you make this dish of king crab, it tastes absolutely heavenly! It is a dish with a lot of flavor and it is quite spicy. King crab is unfortunately quite expensive, but sometimes you have to treat yourself to something extra good. This is food enjoyment on a platter! The dish is inspired by Ørjan Johannesen, winner of Bocuse d`Or 2015.
Step 1
This is actually a very easy dish to make, but it is important to buy good ingredients. You MUST buy raw king crab. It may be frozen, but those that are cooked will be far from as good! When cleaning king crab bones, it is important to remove the bruise / tendon that is inside the meat. Carefully cut the joints with a knife and twist gently. Pull them slowly apart so that the disc with cartilage also comes out. After doing this, cut the claws into neat pieces with a sharp knife (bread knife is best).
Step 2
Now you are going to make the sauce that gives the wonderful taste. Start by putting a bundle of coriander in the blender and add the Ketjap Manis. Drive to a smooth mass.
Step 3
Cut up 1 large red chili, 2-3 cloves garlic and ginger into coarse pieces. Pour rice vinegar into a saucepan and add sugar. Bring to the boil and add the ginger, garlic and chili. Boil for about 5 minutes so the sugar dissolves completely. Pour the hot bag straight into the blender together with the coriander mix and run smoothly. Now just heat a large saucepan and add a little butter and neutral oil.
Step 4
Shake black pepper in a pan. This gives a more aromatic and nutty taste. Crush in a mortar or with a frying pan etc .. here it is allowed to be creative. Add the pepper to the hot butter. Let it simmer for a minute before placing the pieces of king crab with the shell down. Here it is important to work with a little high heat. (at heat from 1-9 I would use 8). Stir gently and see that the crabs get color. After about 2-3 minutes, add the mix from the blender straight into the pan. Let this boil, reduce and glaze the crab pieces. Stir occasionally so the sauce mixes in everywhere. This takes about 4-5 minutes.
Step 5
Now the dish is ready for serving. Place the crab pieces on a nice plate and sprinkle over some freshly cut spring onions and garnish with coriander. Serve good bread and some boats with lime. Remember well with napkins when serving this! Good luck.
