Korean cabbage salad - spicy, crispy and delicious accessories

  • 1 pcs small cabbage
  • 1 pcs small red cabbage
  • 1 pcs cucumber
  • dressing (see recipe below)
  • 1 pcs spring onion
  • 1 tbsp sesame seeds

Dressing

  • 3 tbsp gochujang chili pasta
  • 2 tbsp Gochugaru chili pepper mild
  • 4 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 0,5 tbsp sesame oil
  • 2 tbsp sesame seeds

This cabbage salad is a taste bomb and an accessorie that goes well with many dishes. You get the very best result if you shop at an immigrant store to get the Korean products, but you can also get a very good coleslaw by adapting with similar sauces and spices.

Step 1

Start by mixing all the ingredients for the sauce and mix well. Taste to adjust. My recipe here is spicy so you can adjust down on the amount of chili if you want it a little milder. Now you get a delicious sauce with sesame seeds. The sauce has a good balance between sweet, sour, strong and the slightly sour from the fermented chili puree.

Cut red cabbage, cabbage and cucumber into thin strips. You can use a knife or a grater.

Step 3

Pour the sauce over the chopped vegetables and mix well with your hands. I give the cabbage a small 5 minute massage with the sauce so that all the small pieces are covered. Now cover and put in the fridge. It must be marinated for a minimum of 1 hour, but if you make it the day before, it will be even better.

Step 4

Just before serving, I mix in some spring onions. Pour onto a plate and sprinkle with a little extra spring onion for garnish and some sesame seeds. Then this delicious Korean cabbage salad is ready. Cabbage is very healthy, good and cheap! Use the cabbage salad as an accompaniment to Asian dishes, in a burger or anywhere else you want some crispy and spicy side dishes. Good luck.
