Lamb thighs - How to get the perfect result!

Now it's Easter and there are an incredible number of people making lamb thighs. I've been asked a few questions if I can post a recipe, and I'm glad to do so.

  • 1 pcs lamb thighs (without the shin, then it will be easier to handle)
  • 10 pcs garlic clove
  • 1 pcs onion
  • 2 pcs carrot
  • 2 tsp neutral oil
  • 1 kvast fresh rosemary
  • salt and freshly ground pepper

A lamb thigh is actually very easy to make, but can also be a sad experience if it is not cooked properly. Here I will show my method. You just need time and a little love.

Step 1

Remove the leg of lamb 1-2 hours before you start cooking. Find a small blender and run rosemary and garlic together with a little neutral oil to a smooth "dressing"

Spread this well all over the leg of lamb. Make sure everything is covered. I give the lamb thigh a little massage with this delicious oil. Cut up the onion and carrot and place in a large fireproof pan. Pour some water into the bottom of the pan and place the leg of lamb on top of the vegetables.

Preheat the oven to 225 degrees. Insert the leg of lamb, but after 10 minutes open the door of the oven and lower the degrees to 65 degrees. 65 degrees I think is the perfect core temperature. Now just take the time to help. Bake the leg of lamb for at least 6 hours at this temperature. It does not matter if it is 8 hours either :-) Take a walk, sit in the sun wall and read a book. Now the food cooks itself. When there are about 45 minutes left until the food is to be served, I take the leg of lamb out of the oven. It is important that it is allowed to rest for at least 30 minutes.

Turn the oven to grill mode. When there are 10 minutes left to serve, insert the leg of lamb for a little grilling. This gives a delicious crust and the fat becomes a little crispy. Carefully cut up the leg of lamb.

Step 5

I think it's nice to cut up half the side and place back on the thigh when it is to be served. If not, divide into fine pieces and arrange the food neatly on a plate. Sprinkle a little good salt over the meat just before serving. Good luck and happy Easter!
