Mac`n Cheese - Very popular accessory in the United States

Medium fireproof casserole
  • 300 gram macaroni
  • 5 dl milk
  • 2 tbsp wheat flour
  • 3 tbsp butter
  • 2 pcs shallots
  • 1 cloves garlic
  • 1 tsp ground nutmeg
  • 2 tsp dijon mustard
  • 200 gram dry cheddar
  • 50 gram parmesan cheese
  • 100 gram cheese
  • salt and pepper

I was recently on a vacation in the US and a side dish that came up again and again was Mac`n cheese. It was as common as an accompaniment to lobster as beef. The truth is that a good Mac`n cheese is incredibly good! Gratinated macaroni in a thick cheese sauce rarely goes wrong. Here is an authentic and very good recipe for this American side dish.

Step 1

Start by finding a pot or frying pan with a high edge and set on medium heat. Add the butter and add the finely chopped shallots and garlic. Cook over medium heat until the onion has become completely shiny and soft.

Add the flour and dilute with milk. Stir regularly so that it does not burn in the pan. Let boil for a few minutes and turn down the heat so it does not boil anymore.

Taste the sauce with the spices and grate the cheese. Add almost all the cheese, but save a little to have on top when it goes into the oven.

Boil the macaroni according to the instructions on the package, but leave it a little undercooked. Then cook for 2 minutes shorter than stated on the package / bag. Pour off the water and mix the macaroni with the cheese sauce.
