Mango sorbet with lime and chilli - A refreshing dessert!

This is easily made without an ice machine!

  • 2 pcs mango
  • 2 pcs lime
  • 0,5 tsp salt
  • 0,3 pcs red chili without seeds
  • 2 tbsp honey
  • 1 dl water

Topping

  • 1 pcs grated lime peel
  • 1 pcs grated frozen chili

I love the taste of mango and the combination with a bit of acidity from the lime and a bit of spice from the chilli is incredibly good! Perfect as a slightly lighter end to a meal or completely alone if you fancy something cold and good. This is one of the recipes from the dessert chapter of my brand new cookbook: My Food Universe

Mangosorbet

Step 1

Start by cutting the mangoes into pieces. Place this in a blender with the rest of the ingredients. Mango has a lot of fiber so run the blender for 5 minutes. Strain to release chunks of chili or the core from the mango. Then put the mixture in the fridge for 1 hour so that it cools down.

Step 2

If you use an ice cream machine, you can pour the cold mixture straight into the ice cream machine and make a nice sorbet. If you are making without, put the bowl in the freezer and take it out every 20 minutes and stir well. This is done so that no crystals form in the sorbet when it is frozen. When it has reached the perfect consistency you can either serve, or leave it in the freezer for later. Then it is best to pour it into an airtight box. Take out and put in the fridge a little before serving so that you get the right consistency.

Put a scoop of ice cream in a glass or on a plate and grate over the frozen chilli and lime zest.

Tip: If you want, you can also pour over a few drops of well-aged rum.
