Mashed root - The most important side dish to lamb ribs.
Lots of butter and a touch of acidity gives it the perfect taste!
Ingredients
- 1 000 gram turnip (peeled)
- 200 gram carrot
- 400 gram butter
- 0,5 tsp white pepper
- 1 tsp salt
- 0,5 pcs lemon juice
- 0,5 dl lamb rib stock (optional)
Good mashed roots are extremely tasty. You can choose yourself how coarse you want it to be. I have tried a lot of variants of mashed roots, and I believe that a combination of turnip and carrots gives the best taste. A large amount of butter and a hint of lemon gives a good acidity to the fattiness. It is an easy and tasty recipe.
Step 1
First you peel the turnip and carrots. The vegetables can vary in size, so this recipe will be in grams. The weight of the turnip in this recipe is in grams after they have been peeled. After you have peeled the carrots and turnips, you dice them and put them in a pot.
Step 2
Boil the turnips and carrots till they are tender. This will take around 20 minutes. It is important that you don't salt the water before cooking. If you do so, the consistency of the finished product might become a bit sticky.
Step 3
Then you add the butter to the roots. If you are making lamb ribs you should also add the stock into the mash. Mash till desired consistency. Add salt, white pepper and lemon juice to taste
