My best waffle recipe

March 25. is International Waffle Day. I love freshly baked waffles and although I eat waffles much more often than this day, I thought I would share this recipe. The recipe is no longer a secret after I posted this thread, but I love sharing good recipes.


pcs large waffles
  • 550 gram wheat flour
  • 1 liter whole milk
  • 2 dl sour cream
  • 150 gram sugar
  • 1 tsp salt
  • 230 gram butter
  • 0,5 dl water
  • 2 tsp cardamom
  • 3 pcs egg

This recipe has been carefully tried out to get the best taste, crust, crispiness. I mean this is the world's best waffle recipe. The secret behind the good taste lies in using good butter and sour cream. An ingredient surprised me! Water is the key to getting them perfectly crispy. Step 1

I find the food processor and add the sugar and the eggs. Whisk until smooth.


Step 2

Dilute with 2-3 dl of the milk. Measure out flour, cardamom and salt in a bowl and stir well. Pour the dry mixture into the food processor together with the mixture.


Step 3

Mix to a completely even mass. It is smart not to take too much fluid first because then it is easier to get a smooth mixture. Now pour in the sour cream and the rest of the milk. Stir well and finish by pouring in the melted butter.


Step 4

It is very important that the batter is left in the fridge before you fry the waffles. I usually leave it for 1 hour. Then the batter becomes more airy and thicker in consistency.

Step 5

It is a good tip to put baking paper under the waffle iron (will be much easier to clean afterwards). There is a big difference in the quality of the waffle iron. Invest in one of good quality.


Step 6

Now it's ready to fry waffles. I melt a little more butter that I will use to grease the waffle iron with. When you use melted butter, the waffles get a finer color and a better crust. Bake on high heat. The goal is for them to be completely crispy on the outside, but still delicious and soft inside.


Place on a rack until serving. Bake and serve right away !! Waffles should not wait for guests, guests should wait for waffles. Serve with sour cream and jam or brown cheese and butter.
