Papas Arrugadas con mojo - Canary potatoes with grilled paprika sauce

Delicious salty potatoes with a wonderful dip!

  • 1 kg small potatoes
  • 8 dl water (until it almost covers the potatoes)
  • 2,5 dl sea salt

Red Mojo sauce

  • 1 can grilled peppers (ca. 400 grams)
  • 4 cloves garlic
  • 0,5 dl white wine vinegar
  • 1 tsp sugar
  • 1 tsp cayennepepper
  • 1 tsp smoked paprika powder
  • 3 dl Spanish olive oil

This classic Spanish dish / accessory is known from the Canary Islands and tastes very good. The dish is served as a snack or as an accompaniment to a larger tapas menu. The potato skin is wrinkled and salty on the outside and on the inside of the potato it is delicious and soft. Dip in mojo-sauce and enjoy. An affordable and very good dish. It is perfect to use Norwegian new potatoes when available.

Step 1

I start by making Mojo Rojo which is the red sauce. This dish is often served with both green and red sauce, but I think the red is the best. The sauce is made from grilled peppers. It is easy to make and tastes very good. Start by putting grilled peppers, vinegar, garlic and spices in a blender or bowl. Run to a smooth mass and dilute with olive oil. Finish by tasting the sauce with salt.

Step 2

Rinse the potatoes well and find a pan. Place the potatoes in the pan in an even layer. Pour on water so they almost cover the potatoes. In this recipe I used 8 dl of water, but it will vary slightly according to the size of the pot. Pour over the salt and bring to the boil.

Step 3

Turn the potatoes over and cook without a lid. You will see that the salt crystallizes along the way. Cook the potatoes until tender on medium heat. This takes between 15-20 minutes. Pour off the salted boiling water. Let the potatoes steam further in the pan. It is important that you do not steam with a lid. The potatoes will then have the classic white layer with salt.

Step 4

Place the potatoes in a bowl or serving dish. Pour the good red mojo sauce into a bowl next to it. Now you can dip the potatoes in the sauce and enjoy. Good luck.
