Pastitsio - One of the most popular dinners in Greece

This is Greece's version of Lasagna. A layer of delicious meat sauce, pasta and topped with a delicious cheese sauce!

Meat sauce

  • 1 kg minced meat
  • 2 pcs onion
  • 4 cloves garlic
  • 2 tbsp tomato puree
  • 1 can canned tomatoes
  • 1 dl white wine
  • 3 dl bull broth
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tsp cinnamon
  • 2 tsp oregano
  • 2 pcs bay leaf
  • a little fresh thyme
  • pepper

Cheese sauce

  • 4 tbsp butter
  • 4 tbsp wheat flour
  • 8 dl milk
  • 50 gram parmesan
  • 50 gram grated cheese
  • 1 tsp ground nutmeg
  • salt and pepper

Remaining raw materials

  • 1 bag pasta tubes
  • 50 gram parmesan
  • 50 gram grated cheese
  • 2 pcs egg

This is a Greek classic and tastes absolutely superb. It is a bit like a lasagna, but the meat sauce has a different taste and eggs are used to keep the dish in a nice shape. I have read and looked at many recipes to get so close to the original Greek traditional dish. This dish is popular with both young and old. Serve with a delicious Greek salad as an accompaniment.

We start with what takes the longest time in this dish and that is the meat sauce. Find a pan or frying pan and add some good olive oil. Finely chop the onion and fry until you add the garlic. Bake for 2-3 minutes and add tomato paste and sugar. Mix this well and cook for a few more minutes.

Pour in the white wine and let it boil almost completely (if you do not have white wine, you can use wine vinegar or apple juice). Add the minced meat and cook until cooked through. Then add the spices.

Mix well and pour on canned tomatoes and broth. Now let it simmer for 60 minutes until almost all the broth is gone and you have a thick meat sauce.

Let the sauce cool down and just before you put it in the pan, mix a ladle with the cheese sauce in the meat sauce. This means that it retains its shape better when it is fried.

Now it is the cheese sauce that is to be made. It is smart to make this and cook pasta while the meat sauce is cooking. Start by finding a pan and melted butter.

Add the flour and stir well. Dilute with the milk and stir regularly. When you have added all the milk and the first bubbles come, the sauce is soon ready. Turn down the heat and add spices, cheese. Mix this well. Finish by stirring 2 egg yolks into the cheese sauce (save on the egg whites). Boil the pasta tubes until they still have good chewing resistance (al dente) and rinse with cold water.

Now we are going to put together this dish and get ready for frying. Start by finding a fireproof pan and take a few drops of olive oil in the bottom. Pour over the pasta tubes and egg whites. Mix well with your hands.

Pour over the meat sauce and squeeze a little so that it is a little compact in the pan.

Pour over the cheese sauce and sprinkle a little grated cheese on top of the cheese sauce.
