Pepper sauce - a forgotten and underrated sauce - flambéed and with green pepper!
Toro's bag sauce is very far from how a pepper sauce should taste.
Ingredients
- 2 pcs large shallots
- 2 tbsp fresh green pepper
- 2 tbsp butter for frying
- 0,5 dl cognac
- 3 dl whipping cream
- 1 tsp freshly ground black pepper
- 1 tsp lemon juice
- salt
Pepper sauce is incredibly good. The delicious taste of fresh green pepper is lovely for both meat and chicken. This is a cream sauce with a good taste of fresh green pepper and onion, yes, it is an eighties classic that is worth taking back on the menu! Unfortunately, the food industry has ruined the pepper sauce's good name and reputation with its lousy bag sauces. Try making this real pepper sauce, then you will realize that this is something completely different.
Step 1
Put a frying pan on medium heat and add butter when the pan has warmed up.
Step 2
Add finely chopped shallots, green pepper and freshly ground black pepper. Cook until the onion is completely soft.
Step 3
Now you need to flambé in cognac. Find a match so you're ready. Pour in the cognac, tilt the pan slightly, wait 2-3 seconds and turn on. Let the flame burn out.
Step 4
Add the cream and cook until it thickens.
Step 5
Season with lemon juice and salt.
