Poke Bowl - A healthy and very good dish from Hawaii.
This dish has become very popular in the last year and I understand why.
Ingredients
Marinade / sauce
- 2 dl soy sauce
- 1 dl rice vinegar
- 0,5 dl mirin (possibly 1 teaspoon sugar)
- 2 cloves garlic
- 1 klump grated ginger
- 1 tsp chili flakes
- 1 pcs lime (juice only)
- 3 tsp sesame oil
- 500 gram sushi rice
- 500 gram salma salmon
- 1 pcs carrot
- 1 pcs red onion
- 10 pcs sugar peas
- 1 pcs mango
- 1 pcs chili
- 0,5 pcs cucumber
- 1 tbsp roasted sesame seeds
- 1 pcs avocado
Quick "chiliaioli"
- 2 tbsp Hellmann's mayonnaise
- 1 tbsp siracha chili sauce
Poke Bowl originates from Hawaii and here you can use whatever you want of good vegetables and fish of sushi quality. The dish consists of marinated fish, sushi rice, vegetables and a very good sauce so this is so healthy that you can eat it every day. A plus is that it is very nutritious and is perfect in the summer. If you have not tried this yet, it really is time.
Step 1
Start by boiling the rice. I recommend using sushi rice for this. Follow the instructions on the package and let the rice cool down before using it in this dish.
Step 2
Start by making the sauce / marinade. This is easy, but it is important that you taste it so you get a good balance on the dish. If you follow my recipe, you will have a very good starting point. You can adjust with the amount of chili, ginger, garlic and rice vinegar to get it just the way you want it.
Step 3
Cut the fish into small cubes and pour over about 1/3 of the sauce. Mix well and let the fish enjoy itself in this marinade for about 20 minutes before serving the dish.
Step 4
Make a proper aioli, check link here Aioli, and mix with chili sauce or mix together a proper mayonnaise such as Hellmann's with siracha chili sauce.
Step 5
Cut all the vegetables into suitably large pieces. It is fun to make slightly different shapes and thicknesses so it becomes more exciting to eat the food. Consistency and texture are also important when making and eating food. I cut the onion into thin slices. I cut the cucumber in cubes, and I make small strips of carrot. I slice the avocado and cut the mango in cubes. Here you can let your imagination run wild and add the flavors you think are best yourself.
Step 6
When preparing the food, place rice in the middle of the plate and place all the different vegetables and fish over the rice. I like best to let them lie a little apart so many can make perfect pieces with the Poke Bowl themselves. Pour over the rest of the sauce and top with sesame seeds, thinly sliced chili and fresh coriander. I also like to serve with a little chiliaioli on. In the recipe you will find a "quick variant" of this that works great for the dish.
