Quesadilla - Meat-free, spicy and incredibly good!
Delicious filling and cheese squeezed together by wheat tortillas is the recipe for a happy dinner.
Ingredients
Quesadilla
- 1 can VegMe Vegetarian Buns
- 1 pcs onion
- 0,5 pcs squash
- 3 cloves garlic
- 1 pcs sweet pepper
- 1 pcs red chili
- 1 tsp cummin
- 2 tsp smoked pepper
- 1 handful finely chopped parsley leaves
- salt and pepper
- olive oil for frying
- 8 pcs wheat tortillas
- 150 gram grated mozzarella
Good accessories
- nachochips
- avocado
- jalapeno
- sour cream
Quesadilla is easy to make, tastes incredibly good and is really just delicious filling pressed together by wheat tortillas and fried in a pan. There are several of my followers who ask if I can post some more vegetarian dishes or meat-free dinners. Today I tested the new series from Meny called Vegme. There are fresh vegetarian products that can replace meat on the dinner menu from time to time. I got free rein to make the best recipe with their products and the result was some incredibly good Quesadillas. If you want to read more about Vegme products check out the link here.
Step 1
Start by finding a frying pan and set on a fairly high heat. Pour in a little olive oil. Finely chop onions and coarsely chop VegMe vegetarian buns. Put in the frying pan and fry well until the onion has softened.
Step 2
Finely chop squash, sweet peppers, garlic and parsley leaves. Add to the frying pan and add spices. Bake for 5-10 minutes.
Step 3
Here's the simple process of making Quesadillas. Start by finding a wheat tortilla and add cheese.
Step 4
Add about 1/4 of the filling.
Step 5
Sprinkle with a little more cheese and finish by placing a wheat tortilla on top again. Press gently with your hands so that there is a slightly firm consistency between the wheat tortillas.
Step 6
When frying Quesadilla, use a dry frying pan. I use medium heat (ie from 1-9 I use 6). Fry until the cheese is completely melted and the wheat tortilla has become crispy and golden. Carefully turn and fry on the other side. I fry for about 5 minutes on each side.
Step 7
When the Quesadilla is done cooking, place it on a cutting board and divide it in 2 with a sharp knife. I like to serve this with some nacho chips, avocado, extra chili and sour cream. Now just enjoy! Good luck with a meat-free dinner.
