Røsti potatoes - Fried strips of potato

Potatoes are so versatile and suitable for most things.

The Røsti potato, in German called Rösti or Kartoffelpuffer and in English hash brown, is a dish made from potatoes that are grated or cut into strips and then pressed together in a cake, and then fried. Røsti potatoes are very good and much easier to make than you think. You can prepare them well before dinner and fry them ready just before the guests arrive. You can make them as small cakes or as a whole frying pan and divide into pieces. The crispy crust tastes fantastic! Røsti potatoes look inviting and delicious on the plate. I make the big enough that it holds with one per person.

Step 1

Start by finely chopping shallots. I used 3 shallots for 10 potatoes. Add a good lump of butter to a saucepan and add the onion. Let it simmer for a few minutes until the onion is soft. Turn off the heat and let it cool down. Peel the potatoes and grate them.

Grate the potatoes into strips and squeeze out as much liquid as you can with your hands or in a kitchen towel. Add the onion and add well with salt and pepper. Stir well so that the onion and butter are well distributed with the potatoes. When you are going to fry hash browns, you can make small cakes that you shape with your hand, use a baking pan or make a whole pan. If you are making a whole pan, use a plate to turn it over. I like to make in baking pans. Then everyone gets the same size and looks a little prettier. I make one Røsti per person.

Find a frying pan and fry the potatoes until they get a golden nice color and turn. Do the same on the other side.

Place the fried potatoes in an fireproof casserole. The potatoes are raw so they need a trip in the oven to finish. I fry them for 15 minutes at 200 degrees.

Serve with meat, fish, game, chicken. Røsti tastes fantastic and suits almost everything. Good luck.
