Sander´s summer salad - Dinner on the children's premises

A summer salad with Sander's favorites!

  • 250 gram pasta penne
  • 1 pcs fresh pineapple
  • 3 pcs apples
  • 1 pcs cucumber
  • 0,5 can stone-free grapes
  • 100 gram jarlsberg cheese
  • 1 pcs sweet peppers

My son Sander will be 13 this year and today he was the one to choose the ingredients for today's dinner. The result was a very fresh and good salad without dressing. I make a lot of different food every day and when your son says: "Dad, you have to make something new every single day" I thought it was appropriate that Sander could decide the ingredients himself. This is a child-friendly and fresh salad with lots of good flavors.

Step 1

I season the chicken with salt and pepper and fry in a little neutral oil before I put the whole frying pan in the oven at 160 degrees and let the chicken finish frying in the oven. When the breasts have a core temperature of 61 degrees, they are ready.

Step 2

Find a pan and add water and salt. This is a quick dish to make so it's smart to start cooking pasta as soon as possible.

Step 3

Rinse and cut up all the vegetables and fruits. Cut them all into different sizes and shapes to make it a little more fun to eat. I made apple boats, cubes of cheese and pineapple, etc. Feel free to let the children cut and decide the shape. Involve the children in the cooking and it is even more fun to eat the food afterwards.

Step 4

When the chicken has rested, I cut it into small pieces. Allow the pasta to cool and add a little olive oil to the pasta so that it does not become so sticky.

Step 5

Mix everything in a large bowl and add a little salt and freshly ground pepper. Feel free to make a large portion for the leftovers are perfect to include in the packed lunch the next day.
