  • 80 gram butter
  • 2 tbsp finely chopped chives
  • salt and pepper

I am very fond of scrambled eggs and make this quite often. For me, there is a big difference between a good and a bad scrambled egg. Although the raw materials are really the same, it is the treatment that makes the difference. Here I show you my recipe and method. The result is a silky soft, juicy and tasty scrambled eggs. See video instruction at the bottom of the recipe.

Step 1

Start by cracking the eggs in a bowl and make sure there are no shells. Add a little salt and pepper. Stir gently together so that there is not so much air in the batter.

Find a pan and a baker's scraper. Put the pan on medium heat and add the butter. When the butter has melted, I add the scrambled eggs. Now stir regularly with the baker's scraper and make sure that the eggs do not burn in the bottom of the pan. Do this until the batter thickens and turn down the heat a little at the end. Just before the scrambled eggs are done, I add some finely chopped chives. Pour into the serving dish and garnish with a little extra chives.
