Spelt bread with oats - I love the smell of freshly baked bread!
With steam and rise function, the job becomes even easier.
Ingredients
- 5 dl water
- 0,5 pcs dry yeast
- 1 tbsp good olive oil
- 15 gram salt
- 2 tsp sugar
- 500 gram sifted spelt flour
- 100 gram oatmeal
Making bread yourself is quite easy and you can vary in a lot of different breads. Today I woke up and we were empty of bread and then it was just a matter of throwing a dough in the oven. If you have a steaming and raising function, you will cut down on the time of making homemade bread considerably. Steam also gives a more moist surface so the bread can be raised more in the oven before the crust forms. I'll show you how to make this bread with a steam oven and without.
Step 1
Start by pouring tempered water, yeast and sugar into the baking dish. Mix together and let stand while measuring the other ingredients. You will see that the yeast begins to form small bubbles in the water. Then you know that the yeast works and then you will get a good bread in the end.
Step 2
Pour in the rest of the ingredients and mix together on medium speed for 5 minutes. It should be a sticky dough.
Step 3
I now put the whole baking bowl straight in the oven and turn on the rise function for 30 minutes. You can also cover the bowl with plastic and leave at room temperature for about 1 hour.
Step 4
Scrape out and pour the dough on a floured bench. Fold the dough 6-10 times. Grasp the outer edge of the loaf on all sides. You do this by stretching the dough from you and folding towards the middle. This makes the dough tighten up and you get a better consistency on the bread when it is done.
Step 5
Grease a bread pan well with neutral oil (I use sunflower oil). Transfer the bread dough to the pan. I put the bread pan back in the oven at 30 minutes rise function 30 degrees. You can also leave the dough covered with a towel or plastic at room temperature for about 1 hour.
Step 6
Pour over some good olive oil and sprinkle over some oatmeal and some spelt flour on top.
Step 7
Place the bread in a preheated oven at 250 degrees with full steam access. If you do not have steam, heat up to 250 degrees hot air, insert the bread and pull in 5-6 ice cubes in the bottom of the oven and close the door. This melts a little slower and will give steam to the bread at the beginning of the baking period.
Step 8
Bake the bread for 15 minutes at 250 degrees. Turn the heat down to 190 degrees and bake for 30-35 minutes until the breads are golden and fine. Take the bread out of the pan and let it rest on a rack.
Now you have delicious freshly baked spelt bread for breakfast and packed lunches. Good luck.
