Spelt rolls - good and airy!

On the weekends I think it's always nice to have a good breakfast with the family. Breakfast is even better with freshly baked rolls.

Spelt rolls

  • 450 gram sifted spelt flour
  • 1,5 dl milk
  • 1,5 dl water
  • 0,5 bag dry yeast
  • 50 gram butter
  • 2 tsp salt
  • 1 tbsp sugar

For brushing and sprinkling

  • 1 pcs egg
  • 1 tbsp spelt flour

This recipe is simple and the result is good every time. I use a lot of spelt flour instead of wheat as my better half does not tolerate wheat. Spelt flour behaves a little differently than wheat flour, but the taste is good and can replace wheat flour in most recipes.

Measure out the spelt flour and add sugar, salt and dry yeast.

Step 2

Heat the milk and add the butter. Pour in ice cold water and then you have the right temperature to mix with the flour. Pour the liquid and the dry into the kitchen machine and knead together for 5 minutes. Adjust a little with extra flour or liquid if the dough becomes a little too sticky or seems dry. Spelt flour is not so fond of kneading too much so 5 minutes is enough and then I collect the dough with my hands. Let rise for 45 minutes in the bowl covered with plastic.

Step 3

Divide the dough into 9 equal parts and shape into buns. Place on a tray with baking paper and let rise for another 45 minutes. One of the features I have become most fond of on my Siemens oven is the raising function. The result is very good every time and you save some time. If you have a lifting function, you can use this and then they only need 20 minutes. The dough is then raised to 40 degrees with a little steam.

Step 4

After raising, I brush on some eggs and cut the top with sharp scissors. Sprinkle with a little extra spelt flour. Put in the middle of the oven in a preheated oven at 225 degrees. Bake for 10-12 minutes and let rest a bit before serving.

Then the spelt rolls are ready to be enjoyed. Add your favorite topping. One of my big favorites is hot rolls with butter and jam! Good luck.
