Spicy cod with broccolini in Asian glaze - Sends the taste buds on a party!
Ingredients
- 800 gram cod loin
- 2 pakker broccolini
- 4 cloves garlic
- 1 pcs red chili
- 1 tbsp sesame seeds
- 2 tsp turmeric
- 2 tsp salt
Spice marinade
- 2 tsp mild chili powder
- 1 tbsp ground coriander
- 1 tbsp garam masala
- 2 tbsp neutral oil
- 0,5 pcs lemon (juice only)
Asian Glaze
- 2 dl water
- 2 tbsp soy
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp brown sugar
- 1 tbsp cornstarch (mixed with water)
- 2 tbsp water (mixed with cornstarch)
I like spicy food and this dish is both quick to make and has lots of flavour. You can adjust the strength of this dish yourself with the amount of chili. Remember that different chili powders have different strengths, so it can be smart to taste your way to the perfect taste for you.
Step 1
Start by cutting the fish into portioned pieces and transfer to a pan. Season first with salt and turmeric. Leave the fish with this when you make the spice marinade. Mix the ingredients together and brush the top and sides of the fish.
Step 2
Fry the fish with the side you have the seasoning on facing down. Fry in a hot pan with a little neutral oil. Cook for a couple of minutes and turn. Cook for 2 more minutes. The fish is ready when it begins to flake nicely and the fish meat is glossy and fine. The time will vary with the size of the fish pieces and temperature. So watch out. When the fish is done, I lift one back into the pan.
Step 3
In the same pan, I now add finely chopped garlic and chilli. Fry for a couple of minutes and add the broccolini. Pour over the water and let steam for 1-2 minutes. Mix together the ingredients for the Asian glaze, but wait with the mixture of cornstarch and water. I mix the cornstarch and the water together in a small bowl and this is the smoothing that makes the sauce thicken in the end. Pour over the rest of the mixture. Leave this for a couple of minutes until the broccolini has been cooked a bit but is still crispy and good. Lift out the broccolini and place in the pan. Now pour over the cornstarch mixture and cook for 2 minutes.
Step 4
Finish by placing the broccolini on a plate and add a piece of fish. Pour over some of the good glass and sprinkle with sesame seeds. Garnish with some fresh coriander if you like. Here you can see a film of how I make this dish.
