Summer salad - sweet, salty and sour

A perfect combination of sweet, salty and sour.

  • 10 skiver cured ham
  • 1 pcs watermelon
  • 100 gram feta cheese
  • 50 gram olive
  • 200 gram ruccola
  • 1 handful fresh parsley
  • 1 handful fresh mint
  • 10 pcs small tomatoes
  • 2 pcs lime (juice only)
  • 1 pcs red onion
  • olive oil
  • balsamic
  • salt and pepper

This salad is full of the best flavors of summer. A perfect combination of sweet, salty and sour. Serve it as an accompaniment to barbecue or all alone. This summer salad likes both big and small. I like to use fruit in my food in the summer. It gives good flavors and makes the salad even more tempting. Watermelon is very good in salads and together with delicious crispy ham and feta it is a sure winner for a good lunch or dinner.

Start by rinsing the salad, parsley and mint well and put on paper or use a salad sling to get rid of the water.

Cut the watermelon and feta cheese into neat cubes. Cut thin slices of red onion and add to the juice of 1-2 limes. This gives the red onion a milder taste. Just before serving, I take the red onion out of the lime juice and pour a little olive oil, salt and pepper in the lime juice. This will be the dressing for the salad.

Fry the cured ham on medium heat in a frying pan and place on paper so the fat drains off. Divide into neat pieces. Then you get delicious crispy serrano ham.

Find a large nice salad bowl, grate the salad, parsley and mint with your hands and place in the bowl. Add the diced watermelon and feta cheese. Add some small tomatoes and good olives without stones. Pour over the "lime marinade" stirring well with your hands or two large spoons. Garnish with a little mint on top and drizzle a few drops of balsamic vinegar over the salad. Now the salad is ready! A quick, easy and very good summer salad.
