Sourish cabbage salad / Swedish pizza salad - healthy, fresh and evokes lots of good memories!
I'm hooked! This sourish cabbage salad evokes old memories and is very good.
Ingredients
- 1 stor fresh cabbage
- 1 dl extra virgin olive oil
- 1 dl 7% white vinegar
- 1 tbsp oregano
- 1 tsp salt
- 1 tsp white balsamic vinegar (optional)
I remember very well when I was little and was at a pizza restaurant in Sweden. Before and for the pizza, we were served this delicious fresh cabbage salad. Now I've made it again and it's so good. Great as an accompaniment to barbecue, fish and of course Pizza if you want to do as in Sweden.
Step 1
Start by removing the outer leaves of a fresh cabbage and rinse well. Let the cabbage drain. Cut the cabbage into thin strips with a knife. Do not bring the stem.
Step 2
Mix together vinegar, balsamic vinegar, salt and oregano in a bowl. Whisk together and dilute with olive oil. Taste. If you want it more sourish, take in a little extra vinegar. If you want it milder, add a little more oil.
Step 3
Put the finely shredded cabbage in a bowl and pour over the oil mixture. Mix well with your hands. Put on plastic wrap and put in the fridge for at least 2 hours. It will be best if you make it the day before. If you have it in an airtight box in the fridge, it will last for about 5 days.
Serve as a fresh accompaniment to meat, fish or pizza. This is healthy, fresh and very good!
