It may be strange to call it the best in the world, but I have not yet tasted any better so then I think the name fits well. Spicy meatballs in tomato sauce or Albondigas as it is called in Spain is one of the most popular tapas dishes. I have used this recipe for many years and get lots of nice feedback for it every single time. Today my wife was going to a party with her friends and everyone was going to have a dish each. Usually I get the job of making focaccia and aioli, but this time someone else had said they should bring it, so then it became the classic meatballs in tomato sauce.
Ingredients
Recipe meatballs
- 1,6 kg minced meat
- 4 pcs shallots
- 1 hel garlic
- 50 gram grated parmesan
- 3 pcs red chili
- 2 brødskiver white bread without crust
- 2 dl milk
- 3 tsp salt
- 1 tbsp fennel seeds
- 1 tsp black pepper
- 1 tsp coriander powder
- 1 tbsp paprika powder
Recipe tomato sauce
- 3 bokser canned tomatoes
- 2 pcs shallots
- 2 dl red wine
- 1 tbsp red wine vinegar
- 1 tbsp sugar
- 2 tsp salt
- 1 handful fresh basil
- 1 handful grated parmesan

Step 1
Start by cutting the crust off the white bread and divide into pieces. Place in a bowl with the milk. Then the bread dissolves and becomes a smooth mass after a while. This gives the meatballs a very good consistency and elasticity.
Step 2
Finely chop the shallots, whole garlic and chili. Find a frying pan and pour in plenty of olive oil.
Step 3
Turn on medium heat and fry the onion mixture until soft. Mix together the spices (not salt) and crush or grind in a small blender.
Step 4
Mix this together with the onion. The salt should be straight into the minced meat.
Step 5
Put the minced meat in the baking dish and pour on the salt. Mix this together first until you get a slightly sticky consistency. Then add the onion mixture, the soft white bread and parmesan.
Step 6
Run in the food processor for 5 minutes until everything is well mixed.
Step 7
Find a frying pan. It is easiest to use a pan of Teflon or similar that things do not stick to so easily. Pour in well with olive oil and make a meatball before you make the rest. Then you can correct with a little more salt or spices if you want. When you are satisfied, you can start meatball production.
Step 8
Use damp hands and roll out lots of nice meatballs. Fry in oil and place in a pan. Bake on fairly high heat. They do not need to be cooked through because they will boil a little afterwards in the tomato sauce.
Step 9
Fry all the meatballs and finely chop the shallots in the sauce. When you have finished with the meatballs, put the shallots in the oil you have fried the meatballs in. This has got an incredibly good taste and makes the sauce very good. Fry the shallots for a few minutes before adding red wine and red wine vinegar. Let boil for a few minutes before pouring in the tomatoes, salt and sugar. Bring to a boil and taste.
Step 10
Pour the tomato sauce over the meatballs and sprinkle with parmesan. Mix together and bake in the oven for 15 minutes at 225 degrees. Finish with a few good drops of olive oil and lots of fresh basil. Now just enjoy these delicious meatballs. Good luck.
