I love homemade pasta!
Ingredients
Cheese filling
- 250 gram ricotta cheese
- 50 gram grated parmesan
- 1 handful fresh basil
- 1 tsp good olive oil
- salt and pepper
Fresh pasta
- 200 gram wheat flour (tipo 00)
- 130 gram egg
- 10 gram salt
- 1 tsp olive oil
Tomato sauce
- 5 cloves garlic
- 2 pcs shallots
- 2 dl white wine
- 2 bokser canned tomatoes of good quality
- salt and pepper
- good olive oil
- grated fresh parmesan
- fresh basil
It is much easier to make homemade pasta than most people think. The result is fantastic silky soft fresh pasta. When you also fill the pasta with good cheese filling and make a tasty tomato sauce, this is excellent! Feel free to prepare the pasta the day before or earlier in the morning so that you have it very easy when you are going to serve dinner.
Step 1
Start by making the pasta. I have made a separate post about how to make fresh pasta, you can see it here. Homemade pasta - The best pasta you make yourself!
Step 2
Mix together all the ingredients for the cheese filling and season with salt and pepper. Transfer to a spray bag.
Step 3
After the pasta has been in the fridge for a minimum of 30 minutes, roll it as thin as you can. Tortellini are best if the plates are thin. So I use the thinnest setting on the pasta machine. Stick out appropriate circles and place some cheese filling in the middle.
Step 4
To make the tortellini itself, I moisten half of the edge with a little water with my finger. I fold them together and squeeze so it is completely tight. Then you have a semicircle with the filling in the middle. Take each end and fold towards each other and you get the classic tortellini shape.
Step 5
Place on a platter with a little flour or cornflour.
Step 6
Fry garlic, shallots and chili flakes in good olive oil and add the wine. Let reduce for 5 minutes and pour in tomatoes. Season with salt, pepper and sugar.
Step 7
Boil the tortellini in plenty of salted water and cook for 4 minutes. Mix with the sauce and grated parmesan.
Step 8
Pour over a plate and serve. Decorate with a little basil and enjoy.
